Arugula Pear Side Salad

this is a side salad i’ve served with scallions and lamb on a couple different occasions. i think it would be a really good summer salad but… its not summer so… we’ll see? it’s pretty basic and i think im gonna add more when i make it again but typically its just plated underneath a richer meat or dish.

ingredients: arugula, cherry tomatoes, pear, olive oil, balsamic vinegar, lemon juice, red wine, salt, pepper.

start off with regular arugula, rinse, pat dry and set aside. i dice or half my cherry tomatoes (depends on preference fr). and then i cut my pear into strips and cut the strips in threes or fours, they should be cube sized. after that you’re basically done with the base. my favorite part is literally the dressing idk why. i do equal parts water, lemon juice, red wine and half a portion of olive oil and balsamic vinegar. after that i sprinkle in salt and pepper. from there i taste test and add whatever i think is missing. then i mix everything in a large bowl and shake. finally i plate with whatever main dish i made for dinner. i want to add something to this salad but idk whatttt so if yall have suggestions let me know. pls. have a good day!
